MeatEater Cooks (2021 - 2021)

Ol Cal, Chef Kevin, and Snort knock off work a bit early one day to hunt some of the last of the season's Montana pheasants. With a couple plump roosters in hand they return to Cal's place so that Kevin can show him a classic French dish that transforms the tough to use legs and thighs of the pheasant into a meal fit for a king; or at least a hungry upland hunter.

Janis Putelis put in some serious work to harvest a mature Bighorn Sheep this year and Chef Kevin Gillespie wants to show him a way to prepare it that lives up to the effort Janis put into the hunt. The pair spends all day creating an ancient Kashmiri Dish called Rogan Josh, along with homemade Naan Bread, before finally getting a chance to taste their hard work.

Kimi Werner certainly knows her way around a kitchen, and when it comes to anything seafood she is an absolute pro. But even pros can still learn something new on occasion and Kevin wants to share a method of preparing octopus with Kimi that he learned from a fellow chef, who is famous for his octopus preparations.
